     Buckwheat with chicken in the oven is one of my favorite dishes. I like to make with drumsticks but we can choose other meats as well. It is Russian comfort food. Dishes with buckwheat is very common on our table in the winter time. So easy to make and very tasty but most important it very nutrition meal. It is great food for kids. Great with little butter on top of buckwheat. I put little butter garnish on the top of buckwheat but someone distracts me and it melted by moment I was ready to take photos. I garnished in the photo with dill pickle flower and marinated bean in the center.

The best pot to cook this dish preferably needs to be heavy. I use my Marrocan dish from clay call tagine. I love it! I heard about this dish on one YouTube videos. Of course, I need to have one! When I shop online, what I wanted was very expensive. One day I see my at local TJMax store, it was before tax $25 dollars. Really, I was so happy to find one like a child! Now I am the proud owner of the tajine! We can make this dish in other heavy pots too.

     In the recipe, I used local Louisiana spices mix Slap Ya Mama. Nobody paid to me for this advertising, it is really my family one of favorite spices mix. It is really good! This mix contains black pepper, red pepper, garlic powder.

Ingredients

6 chicken drumsticks

1 cup buckwheat

2 cups water

1/2 onion

Salt, black pepper to taste

Dry parsley

Slap Ya Mama spices mix or red pepper and garlic powder

5 tablespoon vegetable oil to fry drumsticks and saute onion

How to Prepare Buckwheat for Cooking

Buckwheat needs to be inspected before cooking. Some packages are perfect but some contain seeds covers or grans in covers. Quality depends on the company you buy from. It takes just a few minutes to do it. Base on my own experience, I suggest inspecting. I usually take a piece of paper. So easy to see everything on it in small portions of buckwheat. When you have done wash it in cold water. Wash a few times by water start to be clear.

Some cookbooks suggest to fry it on a stove. I skip this step because it not necessary. With grains I cook in the USA, it cooks well without. However, if you buckwheat takes longer than 30 minutes, this step helps to reduce cooking time.

Place buckwheat in a dish and it is ready to add other ingredients.

Cooking Direction

Preheat oven to 400ºF or 200ºC

  1. Remove skin and fat from chicken drumsticks.

2. Dice onion.

3. Fry chicken drumsticks to done condition (visually looks like done enough, not necessary test with a thermometer) Remove drumsticks and place on top of buckwheat.

4. In the same skillet saute onion. When onion ready add boiling water with spices and salt.

5. Add water with an onion to buckwheat and drumsticks.

6. Cover and bake 40 minutes.

7. The grains very soft and at the same time not stick to each other.
