How to Make Russian Kompot Strawberry Beverage

      Kompot or compot (компот из клубники) is a very popular non-alcoholic drink in Russia. We have so many recipes of kompot! It depends on the season and availability of fruits. I am originally from Siberia Russia and my parents were making kompot from different dry fruits and berries in wintertime and fresh fruits and berries. My mom was making all summer different canned kompot and it was a very rich flavor and very sweet. We opened 3 liters jar and mix it with water in wintertime. Berried or fruits were so good too. My favorite is cherry and strawberry kompot. It was one of the most common drinks in my family and I should include kompot drink recipe on my blog. I don’t do canning anymore but often time making kompot from fresh strawberries when the season. Check out the recipe and make it!

            I am going to share a very healthy version of the strawberry kompot recipe. This recipe is so good because we don’t boil berries and preserve most vitamins in the drink. The taste is so good and pleasant. Very good natural beverage for kids or adults with beautifully vibrant red color! Don’t worry about wine in the recipe after a few minutes of boiling alcohol, will be evaporated but have great flavor.

     If ever, you have the chance to try kompot made with wild strawberries from the Russian forest, it will be in your memory for the rest of your life. I remember this taste and aroma from my childhood. Wild strawberries compare to garden berries have a unique flavor and are much more aromatic!

*We can make kompot from different fruits and berries. The technology of preparation of kompot from peaches is slightly different. At the bottom of the page, I have the peach kompot recipe too.

Video Recipe Russian Strawberry Kompot

Ingredients:

5 cup of water

1 cup of sugar

2 tablespoons lemon juice

3 tablespoons sweet wine

1 pound of strawberries

Sugar and strawberry can have different sweetness and lemons have different acid levels. But it is very easy to adjust to your own taste.

Cooking direction:

  1. Add 1 cup of sugar to hot water and bring to boil.

2. Add 3 tablespoons wine to boiling water and boil for 3-5 min on slow heat to evaporate the alcohol.

3. Turn off heat and add 2 tablespoons lemon juice.

4. Cool off the syrup to room temperature. Add the syrup to strawberries. This way we save most vitamins from the berries. Enjoy after 6 hours!

We serve hot in winter and cold in summer.

Tips

  • I freeze leftovers of kompot in an ice tray. The frozen cubes won’t dilute our beverage. It is nice to add to a glass of water in the summer.
  • Use a pot with a coating because the recipe includes acid. Aluminum pot is not a good choice!
  • If you are going to substitute sugar for honey. Remember, don’t boil or add to hot water honey, add it to warm water (temperature must be pleasant for your hand).

Russian Drink Kompot Garnished With Strawberries In The Shape Of Hearts

          Kompot drink we can garnish with strawberries in the shape of a heart. Very impressive for someone special for Valentine’s day or just show love to your family and friends. To make strawberry heart we can make 2 ways. The first way is the easiest way, just choose strawberry the shape on the bottom looks like a heart. Cut out V shape on the top and the heart is ready. We can leave hearts as is or cut in half. A small touch and not much effort but garnish definitely will be noticeable.

Russian Peach Kompot Recipe

          Kompot from peach we need to make slightly different because peach is more solid fruit than strawberries. Remove seeds from fruits and cover it with sugar because peaches darkened fast. Make the syrup as above. Add peaches to the syrup and bring to boil. Take the pot out of the stove and let rest for 3-6 hours.

*Better use a light pot. The heavy pot holds temperature and after we remove the pot from the stove, fruits continue cooking instead of infusing the syrup with flavors.

    I love the recipe with lemon juice and wine flavors in it! I usually make with strawberries and sugar only. Gala, can I use cooking wine instead of wine with alcohol in it?

      Renata, we can’t use cooking wine instead of wine with alcohol. 1. Cooking wine contains salt. 2. Cooking wine is not great for cooking as well. The best wine for flavoring is wine what we like to drink. If you want to avoid using wine with alcohol, try different additional flavorings. For example, lemon zest can be a great addition.     Thank you, Jeanette! I didn’t try this recipe with raspberries. In my opinion, it will be good taste wise but I don’t think berries going to hold shape and stay beautiful as strawberries.
