Stuffed Potatoes With Meat Russian Style Recipe
This recipe is Russian comfort food. So easy to make and very tasty! This stuffed potato can be a fancy meal or casual meal. All my friends and family in Russia had a curl cutter to make a cavity in a spiral shape from potatoes. It is so impressive to serve stuffed potatoes with spirals around as garnish. The spirals are so nice garnish with many dishes.
Don’t worry, you don’t need to have a curl cutter to make stuffed potatoes with meat or other stuffings. We can replace curl cutter with a 1-inch corer or melon baller going to work well or just use a knife to make a cavity.
Uses of Vegetable Corer in My Kitchen
I can call this recipe healthy stuffed potato because we can easy to omit the butter and use only vegetable oil and it will be an acceptable dish in some diets.
Ingredients
5 large potatoes
1 pound ground meat
2 tablespoon breadcrumbs
1 onion
1 carrot
1/2 cup sour cream
1 bay leave
Salt, black pepper, red pepper flakes to taste
1 tablespoon butter and vegetable oil to saute vegetables
*meat amount approximate, I used 11 oz (300g) this time. However, better to have leftovers ground meat, than don’t have enough to fill potatoes.
Cooking Direction
- Mix ground meat with breadcrumbs and desired spices and greens.
2. Make cavities with a corer. I usually make small circles from inside of potatoes and it looks nice in the dish.
3. Place stuffed potatoes in a pot and cover with water.
4. Saute onion and carrot, when vegetables became soft add salt and pepper and a few flakes of red pepper.
5. Add sour cream to vegetables and saute together 10-15 minutes. The sauce must taste good by itself ( no raw sour cream taste ) before adding to potatoes.
6. Bring to boil potatoes and add sauce. after 10 minutes add bay leaf. Boil on medium heat 20-30 minutes until potatoes are done.
Remove bay leaf. Let stand 10-15 minutes before serving. Serve with sour cream.
