How to Make Russian Chicken Liver Pancakes
Chicken liver pancakes a very common dish in Russia. I cooked it ones a week and mostly frying liver recipe when was living there. I cook not often now because my husband doesn’t eat liver. They are so soft and with mild liver flavor. Beef or chicken livers are very rich in iron. Give a try, you may like it. Of course, if you eat liver. Many people I spoke in the USA don’t eat it. However, some do. It can be also layered with onion and carrot and sour cream sauce and baked for a few minutes. But I usually, just fry it and serve with mashed potatoes. Check out the recipe!
Ingredients:
1.25 lb ( 600 g) – chicken liver
1/2 cup milk
4 spoon of flour
Salt, black pepper, nutmeg and allspice to taste
oil to fry

Remove the gallbladder (marked as 1 in the photo) and discard any liver with green spots (marked as 2 in the photo); this step is essential. If the bile is not removed, the pancakes will have a bitter taste. Also, remove and discard any fat. Wash thoroughly.

- OPTIONAL: Soak liver for an hour or so in cold milk for a milder taste. It improves the taste of the liver and it is very noticeable.
- Mince chicken liver very fine in a blender. Add milk or cream to make looser and run through a strainer. Don’t skip this step, takes a few minutes, but improves a lot of structure of pancakes. Everything that left discard. I show on the photo what left after I run through a strainer, may look like smooth consistency after mincing but it just looks.
2. Add to batter pepper, nutmeg, and allspice. Amount of spices up to your taste. I add 1/4 of a teaspoon of each.
3. Add 4 spoons of sieved flour and salt to the liver.
4. Cover and leave batter for 15- 20 minutes.
5. Make small size and fry liver pancakes. Turn over when a condition on the top like on the photo and fry more few minutes. Try the first pancake for salt, add salt if need it and continue frying.
Place on a paper towel and let it stay for a few minutes before serving. Serve with mashed potatoes or another side dish.

The dish is very excellent as i have tried it yesterday. But i could not find some of the ingredients in my home town. If you love to try new style of chicken liver, try Indian style spicy chicken liver grill that will make your mouth watering.

Manoj, I glad you like the recipe! I would love to try Indian style chicken liver but I probably have the same problem as you are. Some ingredients will be not easy to find where I live. I know, Indian cuisine is so flavorful and many spices in recipes. Thank you for your response!
What a wonderful way to present liver differently! I love your thorough instructions which help those of us who are not liver experts to prepare these pancakes successfully. I think this recipe would be very tasty with a spicy African sauce!
Jeanette, I never tried spicy African sauce but I am sure it is delicious. I cooked your African chicken recipe with habaneros peppers and love it! We also have kind of cake from large liver pancakes. I hope, one day I will be featured on my website.
