Russian Style Baked Salmon Patties With Carrot And Onion

         This Russian-style salmon patties are slightly different than usual fish patties. The recipe has carrot and onion and is great to make for kids. I am sure you are going to like the recipe if follow all my suggestions. Baking is an excellent method to cook patties but if you like more fried patties, fry them. I include the baked method on the bottom of the page too with photos. I like to serve patties with mashed potatoes, rice, couscous, grits, and vegetables.

Ingredients:

800g salmon

150g carrot (1 carrot)

150g onion (1 small onion)

1 egg

1-2 tablespoon chopped parsley

Salt, and black pepper to taste

3 tablespoon vegetable oil (for frying vegetables)

Ingredients Preparation:

  1. Cut salmon in small dice and in addition chop.

This step is important, don’t use mincer or food processor. For the best effect chop salmon in small pieces, patties keep moisture and will be much better than if we use mincer or food processor.

2. Shred carrot on a small shreader. Chop parsley.

3. Small dice an onion.

*If you don’t like small pieces onion you can use dry onion powder instead.

4. I used a food processor to make crumbs from bread without crust.

*We can use dry bread crumbs instead.

Cooking Direction:

*Start preheating oven to 400°F.

5. Add salt to onion and onion is going to release a juice. Saute onion in own juice and vegetable oil. We need completely soft and done onion before going to add to salmon.

6. Add carrot to onion and saute for a few minutes to soften. Vegetables should be done before adding to fish. Slightly cool off vegetables before add to fish.

7. Add slightly beaten egg to all ingredients and mix up.

8. I use ice scoop to make the same size patties.

*Same size patties take the same time to cook. It is important when we are going to bake patties.

9. Line baking pan with baking paper and bake in preheated oven 400°F for 10 minutes.

*Time depends on the size of patties.

Baked salmon patties great to serve with different steamed vegetables, mashed potatoes, green salad and rice.

Alternative Cooking Method:

To cook salmon patties we don’t need much time and this method is a great alternative to baking. We can cook without any oil on the pan if we use baking paper. Very important adjust the stove to medium-low temperature. On the photo above I fried my salmon patties on baking paper. I like this method to fry salmon and not only salmon patties.
