Norwegian Cauliflower Soup Recipe From Chef Ani

       I love cauliflower and always looking for new recipes to try. Most recipes call for cream but this recipe dairy-free cauliflower soup. I like because cauliflower soup without cream, simplicity, we can make in one pot and of course, the taste. Healthy and great comfort food for the winter time. I call it remedy food as well! The recipe has 4 cloves of garlic and when I was cooking it, almost regret to put so much garlic. You may have the same feeling, don’t worry at the end it will be surprisingly mellow as it cooks and the soup comes out just right. The recipe I found on YouTube and the original Norwegian cauliflower soup recipe you can find on Chefani.com website. Really delicious cauliflower soup without cream! The recipe I like as is but small changes to the recipe I made. Instead spice grains of paradise I use celery seeds, instead of vegetable broth I like to use chicken broth. If you like more flavors good will be also a few drops of Tobasco sauce or Worcestershire sauce in this soup.

     I shared my first try of this soup with son’s family and my daughter-in-law said, she can eat it every day! She likes this soup so much! It is one of her favorite soups.

1. Norwegian Cauliflower Soup Recipe On A Stove

Ingredients:

2 tablespoons olive oil
1/2 cup chopped onion
1/2 cup white part sliced leek
4 cloves of garlic, minced
4 cups chicken broth
2 1/2 cups water
1 large head of cauliflower, chopped
2 teaspoons salt
1/8 teaspoon crushed red pepper
1/4 teaspoon celery seeds
1/2 cup cashews blended with 1 cup water to milk consistency

On the photo, I have a medium size cauliflower

Cooking Direction:

  1. Dice fine onion and slice leek. Leek needs to be washed very well. I do it even looks like white part of leek doesn’t have any soil inside.

2. Saute onion and leek until translucent. Add red pepper flakes and garlic and saute for a few minutes more.

3. Add chicken stock, water, salt and bring to boil.

4. Add cauliflower and simmer until tender 15-20 minutes.

5. Blend cashews nuts with water to a milky consistency and strain it to avoid large pieces in the soup.

6. Cool off slightly the mixture and blend with an immersion blender. I personally like one more step and pour through a colander with cashews milk. If soup comes out too thick add more boiling water.

If you feel like too much liquid pour out some and reserve it. You always can add it at the end. If soup comes out too thick add little more boiling water.

7. Add celery seeds powder to your taste.

Optinal can be a few drops of Tobasco sauce (I tried mild Tobasco) or Worcestershire sauce.

Really delicious cauliflower soup without dairy to try!

2. Norwegian Cauliflower Soup Recipe In Instant Pot

       I bought my Instant Pot a few months ago and love it! I make super easy and quick broth in it (much better to buy from a store), cheesecake, meat dishes, fish dishes and like to try other recipes. I really love this kitchen gadget!

      I tried the Norwegian cauliflower soup recipe for Instant Pot. The recipe is not complicated to make on a stove but in Instant Pot great and easy too. So, I am going to share for Instant Pot direction too.

Cooking Direction:

  1. Saute leek and onion on saute mode for 5 minutes. Add pepper and garlic and saute 1-2 minutes more.

2. Add chicken stock, water, salt, and cauliflower. Close the lead and the pressure release switch to seal position.

3. Pressure cook 5 min, on low.

4. A quick pressure release. Switch to venting position and release steam.

I like to use my wooden spatula when releasing steam. I like this safety tip and going to share with you. It is fine to do steam reliese with fingers. However, steam is very hot and I prefer to use wooden spatula to release valve.

5. Blend the mixture with an immersion blender.

I leave not too much liquid with cauliflower and pureing the mixture at first and gradually start adding more liquid. This way we never wrong with consistancy.

6. Add cashews milk. Add celery seeds powder and serve.
