Old Fashion Traditional Russian Dessert From Oatmeal – Kissel

      Healthy and easy to make Russian traditional dessert recipe – oatmeal kissel ovsiannii (кисель овсяный). This is an exotic dessert with no exotic ingredients! This recipe I adapted from Russian chef Maxim Syrnikov, he is a connoisseur of Russian traditional culinary customs. This dessert is great to serve for the kids and adults as well. We can make a more interesting taste-wise version of this Russian dessert and add cream to it but I stay on the healthy version of the recipe. It is very tasty as is the dessert recipe with just a few simple ingredients. Russian pudding (my husband makes up the name) is one of his favorite Russian desserts and he is not a big fan of oatmeal itself. The taste is slightly sour and slightly sweet.

        In the recipe I use only starch from oatmeal but don’t worry, we can and should use leftovers to make great healthy overnight oatmeal. I tested and washed oatmeal is a much better taste compared to not-washed oatmeal flakes. The recipe is at the bottom of the page.

      My favorite way to serve this dessert is garnished with a simple rim with coconut on honey (only outside of the glass). Of course, for a crunch, we can add healthy oatmeal crumble topping as a granola type.

*Kissel has so many meanings in Russian cuisine. Kissel can be a drink, can be a dessert or even a savory dish made from peas. In all recipes have common they thickened with starch. Starch can be from Rye flour, oatmeal, or peas. So many variations of kissel. Some recipes are made from fermented oatmeal. I personally never try and never make fermented oatmeal kissel but know it can be very tricky to make the right way.

Ingredients:

1 cup of oatmeal (Old Fashion)

2 cups of water

2 tablespoons of  lemon juice

lemon zest from 1 lemon

3 tablespoons of honey

Cooking Direction:

  1. Remove zest from the lemon. Juice the lemon.

Zest should be very fine, so not very noticeable. The best tool is zester for this task.

2. Place oatmeal in a jar with cold water. Shake as much as possible, 5 minutes or so. We are incorporate oatmeal starch with water, what is going to thicken out dessert when we boil it.

Important! Water needs to be cold.

3. Strain water very well from oatmeal. The water from oatmeal should be a consistency close to soy milk.

* I like to pour oatmeal milk a few more time back on oatmeal to get more starch for my kissel.

We can make porridge from oatmeal leftovers. Another idea to use – make overnight oatmeal and we don’t need to cook it. Check the recipe on the bottom of the page.

4. Add to oatmeal water honey, lemon zest and lemon juice.

5. Bring to boil and boil on low temperature by the point it thickens like gravy. Cook with steering and don’t leave on a stove alone. Let kissel cool off to warm temperature.

6. Pour oatmeal kissel into dessert dishes and let it thicken more in the refrigerator.

7. It should be holding well shape. We can serve in a dessert dish or place on a small plate. When I put upside down the dish with the dessert it slides out and doesn’t stick to a glass dish.

I decorated my dessert with the stars made from lemon zest. Enjoy!

Overnight Oatmeal Recipe

Washed oatmeal much better taste than directly from a box for overnight oatmeal. The difference is very noticeable. This is very easy to make breakfast and very convenient if you are a busy person and don’t have time to cook in the morning.

Ingreadients overnight oatmeal:

3/4 cup washed oatmeal

100g Milk

100g yogurt

Cooking direction overnight oatmeal:

       Mix up all ingredients and leave overnight in the refrigerator. Ready to eat in the morning. I like to add berries, nuts, and fruits just before I serve it.
