We live in Louisiana and have a variety of homemade recipes for Cajun spice mixes. Every local chef has their recipe. It is a good base of ingredients to experiment with and make your blend from scratch. I found the recipe in one of my cookbooks and adjusted it to my own taste. I have explained below the ingredients and what changes I made to the original spice mix. I always have my homemade Cajun seasoning mix in my kitchen. I can say that almost every time, my Cajun mix has a slightly different taste, but I always like it. I use spices from different manufacturers, and the same spice has a different taste. Also, I used different paprika or 2 different paprikas and this small change makes so a big difference and I have brand new Cajun spice in my pantry! Try this recipe, and I hope you enjoy it as much as I do!

I live in 2 large countries in the World, Russia (my motherland) and the USA (my home now for over 20 years) and noticed interesting facts. People who live in the South of the country use much more herbs and spices in their food than people who live in the North. I heard from one chef, spices and herbs help us resist the hot weather. This explains different tastes and preferences in using spices. I know I have readers all over the world and everybody has different tastes. So, if this recipe is too spicy, reduce the amount of cayenne pepper.

*My go-to store-bought Louisiana spice mix is Slap Ya Mama (Yellow Jar – original) Cajun seasoning. It’s one of a must-have in my kitchen.

Ingredients:

For the best flavor, use the freshest ingredients possible in your mix.

2 tablespoons onion powder

2 tablespoons garlic powder

1/2 tablespoon basil

1/2 tablespoon dried thyme

2 tablespoons black pepper

1 tablespoon cayenne pepper

5 tablespoons sweet paprika

3 tablespoons salt

I don’t include white pepper as in the original recipe. I use an additional spoon of black pepper instead. I use thyme and basil less than in the original recipe too. I omit oregano.

How To Make Cajun Spice Mix:

Measure all ingredients with a tablespoon. Place all ingredients in a jar and shake well. Make sure, the container has enough empty space inside, so mixing will be easy.

*I don’t use a bowl to mix spices as many recipes tell you. The reason is so simple. I don’t have to clean extra dishes after making the spice mix.

My basil has large pieces. I make a powder out of basil in mortal, so it incorporates well in the spice mix.

How To Store:

Choose an airtight container to keep the spice mix. It should be stored in a dark, dry and cool space (not close to the oven) for 3-6 months. We can keep the spice mix up to the expiration date of the ingredients we included in the mix. Of course, we can keep it a little longer but our spices just will be not as flavorful as fresh ones. I make of the mix sometimes half of the recipe and usually use it in one month. It is not complicated to make a new fresh mix again.

How To Use:

So many Cajun seasoning uses in my kitchen! One of my favorites is to mix this spice with melted butter. I cook shrimp, fish or chicken in flavorful butter. I also use homemade Cajun seasoning mix for flavoring other dishes with shrimp, fish, seafood, pork, chicken, beef liver, add to burger and much more. The spice mix contains salt, so we always need to remember and add less salt than usual to the dish. Try to avoid opening a spice mix container close to a steaming pot because steam will be absorbed by spices and makes them less flavorful.

Simple salt tip! After we add salt don’t try the dish immediately. Give the salt time to dissolve in a dish and then try.
