Three Ingredient Cheese Cookies Recipe
The cookie recipe has just 3 ingredients and very easy to make. It nice taste and more on the soft side than on crunchy. Great with soups or just like a snack. The recipe I have from a Russian baker. Personally, I don’t bake very often but when I saw the recipe I tried the next day! The first time I made mistake and didn’t freeze cheese completely, so my dough stuck to a table. I managed to make cookies and learned my lesson. So now I leave cheese and butter overnight in a freezer. From the ingredients in the recipe, I had 18 fish. You can cut in half the recipe for the first time to try.
Cookies can have different toppings because of the neutral taste of dough and we can have an endless variety of toppings. My family’s favorite is with sesame seeds topping. However, you can sprinkle with sugar as well or spices.
They come out the very layered and pleasant taste.
We need:
9 oz (250 g) butter (frozen like a stone)
6 1/2 oz (180 g) soft creamy cheese (frozen like a stone)
5 1/2 oz (150g) flour
Sesame seeds to sprinkle on top
*Butter and cheese I leave overnight in the freezer to be sure it fully frozen.

Preheat oven to 360ºF or 180ºC
1. Shred butter on the large shredder.
2. Shred cheese.
3. Add flour and try gently cover butter and cheese with flour for a few seconds. Try to do it as fast as possible.
4. Place crumbles on a table and start to make a dough as fast as possible. Butter starts melting from hands and it comes to the ball very easy.
5. Sprinkle table with flour and roll dough 0.5 inches thick. Make cookies.
*I usually, half of ball place in refrigerator and work with half. Because this dough likes cold.
Don’t have cookie cutters make one out of the plastic bottle. Check ideas!
6. Brush cookie with water and sprinkle with sesame seeds or sugar.
*Fish eyes I made with black sesame.
7. Bake 15-20 minutes by golden color T= 360ºF or 180ºC
