         The chicken patties recipe I have from my old Russian cookbook and this recipe I cooked for many years. I like it because cutlets come out juicy and very soft, just a few ingredients give us room to change recipe with extra additions, like fillings or cover-ups (photos on the bottom pof the page).  Practical part, we can use stale leftovers from any wheat bread. For this recipe, meat can be used light and dark meat of chicken or turkey. The original recipe allows from goose and duck meat also, but I never try. My choice of spices is very easy, I checked my favorite store mix spices for poultry and use the same spices in the recipe. A great recipe to make for little kids fun way.       Fun food for kids idea to make an eatable hedgehog. Eyes and nose can be made from capers or buckwheat seeds (20 min enough to be cooked for them) or other contrast edible grains or seeds or carrot. Needles I made from instant rice.

      Homemade chicken patties are a good meal for little kids (ground twice meat) but be careful with spices! Kid can be sensitive to some spice. Introduce just one new spice at the time to a child. So, if any problem, you know which spice cause it.

Ingredients:

4  chicken breast (approximately 2.5 lb or 1100 g) or turkey ground meat

4 tablespoon (1/4 cup or 50 g) melted butter

5 oz (150 g) dry stale bread  (I used 3 hot dog buns in video)

2 cups milk to soak bread

Salt and spices to taste.

Spices:

Black pepper

Dry Marjoram

Dry Sage

Nutmeg

Fresh thyme

Fresh rosemary (just little)

Cooking Direction:

1. Soak bread in milk 15-60 min depends on how dry your bread, we need it mushy. Squeezed out of bread milk.

2. Melt butter.

3. Ground chicken meat (if for kids 2 times) together with bread.

4.Add herbs, melted butter, spices, and salt.

5. Shape into patties. Use water for your hands, to prevent meat stick to hands.

6.Grease surface of the steamer with butter before place patties.

7. Steam 20 minutes. Check the internal temperature with a cooking thermometer.

Freezing Chicken Patties

I freeze patties (cooked) in a gravy and use quart freezer bags, 2-3 patties in a bag. Cool off in a refrigerator, cover bags with foil and place in freezer. Easy and quick meal for busy people.

    I love steamed foods. They’re so healthy! I have never tried chicken patties. But, these sound really yummy and the hedgehogs are so cute for kids! I’m definitely going to try.
