French Omelette Recipe Inspired by Madame Poulard Famous Breakfast Perfection
This French omelette recipe is both delicious and unique. After discovering this fancy omelette online, I was inspired to give it a try. I added my personal touch, and my family loved it! Now, I make it once a month for breakfast because this recipe is a true keeper. Inspired by the world-famous Madame Poulard, this omelette has a soufflé-like texture. Known as the “Omelette de la Mère Poulard,” it has been an enduring symbol of French culinary artistry since the 19th century in Mont Saint-Michel, France. Ready to impress your family with this new omelette idea for Sunday breakfast? Let’s dive into the recipe!
* I add thyme, which complements this dish perfectly. You can also use other seasonings, I have a list of herbs and spices to try on the bottom of the recipe.
Ingredients For 3 People:
6 eggs
3 tablespoon milk
Fresh thyme
1 tablespoon butter
Salt to taste
In my recipe, I use butter and thyme for flavor, which perfectly complements this dish. You can also try chives, paprika, turmeric, basil, dill, parsley, oregano, or a hint of garlic powder. A touch of black pepper adds a nice kick too! With just a few added seasonings, your omelette will be much more flavorful than plain eggs. You can also elevate the taste with various toppings like fresh vegetables, meats, and more. Enjoy experimenting with this recipe!

Cooking Direction:
- Crock eggs and place in 2 separate bowls yolks and whites.
*I use a small bowl first to check the egg; this way, if it’s bad, I don’t spoil the whole batch.
2. Add a pinch of salt and 3 tablespoons of milk to the egg yolks, then whisk together with a whisk or fork until well combined.
3. Add salt to the egg whites, then beat with a mixer until they hold stiff peaks.
*Make sure, the dish has no grease spots, and egg whites are cold.
4. Melt the butter on medium heat in the skillet, then add 2-3 sprigs of thyme to infuse the flavor.
5. Remove thyme and pour the egg yolk mixture into the skillet.
6. Add on the top of yorks egg whites and spread whites evenly. Cover with a lid and cook on medium heat.
7. If the egg whites no longer feel sticky to the touch, the omelet is ready.
Cut the omelet in half and stack the halves on top of each other. Add your favorite toppings between the layers for extra flavor. We can add cheese that pairs perfectly with the omelet.
Slice into portions for easy serving. On the top I added a few leaves of thyme. Thyme is a great garnish because we use it to make omelette.
We can also serve the omelet as one side.

There are so many delicious options to layer into an omelet—cheese, vegetables, meats, and more! These additions make the omelet tastier and more visually appealing. Here are a few examples but options are endless!
- Sautéed broccoli with ham and bell pepper. On the top a heart-shaped cutout from the ham. This simple touch brings charm to your romantic morning meal. 💖
2. A spoonful of pesto with a few slices of tomatoes is simple and delicious with the omelet.
